JULIE'S favorite Oat Bran Muffin recipe
( Easy to Bake and Healthy)
OAT BRAN MUFFINS:
2 Cups Quaker or any Oat Bran hot cereal, uncooked.
1/4 Cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1 cup skim or low fat milk ( I like almond milk)
2 egg whites or 1 egg, slightly beaten.
1/4 Cup honey or molasses
2 tablespoons Vegetable oil.
Heat oven to 425 deg F. Line 12 medium muffin cups with paper baking cups or spray bottoms only with non stick cooking spray.
Combine dry ingredients; mix well. Add combined milk, egg whites or egg, honey and oil; mix just until dry ingredients
are moistened. Fill prepared muffin cups 3/4 full. Bake for 15 to 17 minutes or until golden brown. Yield 1 DOZEN
* For variations I like to add Chocolate Chips or Fresh Blueberries. YUM YUM, enjoy!
